You can find Mexican food in the Northern part of Mexico, the North Pacific Coast, the Bajio, the South Pacific Coast, the Southern part of Mexico, the Gulf, and Central Mexico. Most of these places are near where it originated or it is where it originated, but that is why these are the places where Mexican food can be found. First off there is a main similarity that is well known and it is that they both might contain a kind of meat. Another similarity is that they both use veggies in most of their dishes. One of them is that people put ground beef into enchiladas first and that changed a lot of what we eat now. Then, these ingredients were all used: beef, yellow cheese (like cheddar), wheat flour, black beans, canned vegetables (especially tomatoes), and cumin. Most of the time you will find a tortilla wrapped with wheat, but with Mexican food, it is maize that is used. You can find these types of food at Taco Bell, On The Border, Roscoe’s Tacos, Caliente Mexican

In the southwest sheep and goats became a permanent part of the economy and culture of Pueblo and Navajo peoples (Calloway). However, the traditional Navajo diet contained eating boiled mutton and corn, which the corn was prepared in a range of different ways. Also they would obtain flour by taken it through a slight leavening process, then make it into the type of cooked over the embers small cake that is found with Mexican tortillas (Unknown, What Did The Navajo Indians Eat). They could have learned this by the Mexicans because they were so close to Mexico but also because they learned other crafty things from the Mexicans. Also the Navajo diet goat’s meat was a well-known aspect however pork and bacon was a largely disliked in the community (Unknown, What Did The Navajo Indians Eat).
Towards the end of the book, Pilcher describes more on French and European cuisine, rather than Mexico’s. However, in the beginning Pilcher describes the pre-Columbian stage consisting of the market of Tenochtitlan, or what is known as Mesoamerica. Pilcher describes, “every morning sixty thousand shoppers and shopkeepers, dayworkers and dignitaries gathered at this monument to commerce” (Pilcher 8). The first chapter really sets the tone for the book, introducing where everything takes place and discussing early history. Sacrifices were being made to gods in hope for abundant crops.
A similarity would be how they prepare their enchiladas. In enchiladas both Tex Mex and Traditional Mexican prepare it by filling it with ground beef. This is surprising because Traditional Mexicans rarely use beef and mostly only uses pork and chicken. Another is how they cook their tortillas. When tortillas are made they make the dough first ,but there is one difference in making the dough.

There are a lot of similarities and differences between a lot of American and Mesoamerican cultures and empires but I’m going to go over the similarities and differences between 3 american empires the Inca, Maya, and the Aztecs. Another similarity is they all had a economy based around growing crops such as wheat and corn. Alright now for some differences, one is that they used different farming techniques although the Mayans and the Incas used the same technique, the Aztecs did not. Another difference is they were all founded in different locations, the Mayans were founded in Yucatan,

Corn was associated with indians and therefore seen as inferior while wheat associated with europeans was considered superior. This cultural struggle was encompassed by the tortilla discourse. While some mexicans were adapting to some european ways, substituting corn for wheat was the hardest for Mexicans. The main reason Europeans launched this discourse was in order to create a wheat market in the country and put the rural workers into the market economy. Over time the discourse achieved its goal.
The Southwestern cuisine was created at the influence of Spanish, Mexican and Native American cultures. This influence took place, especially in New Mexico, but also in Arizona, Utah, Colorado and California. The cuisine that has formed has become iconic to the United States Southwest with having many similarities between Mexican food and a unique twist to it. The beginning of all this food style influence came from the legacy of the Aztecs, who were dining on beans, corn, chilies, avocados and onions. All these foods were present throughout the time, even before the Spaniards arrived in the New World.
